I've had that happen too. I'm usually player 2 when I fight in a quick game & for some reason it won't let me pick turbo (90% of the time). Also as far as the game freezing when you play a quick game sometimes it will freeze after the first round is won or lost. Instead of going to round 2 the screen will say 'speed adjusted' and nothing happens (no matter how long you wait). The way I usually resolve this is to leave and let my opponent have the win if I lost the first round or ask my opponent to leave if I won the first round. It works for me, but sometimes it's aggravating (especially if the first round was really close).
