Chun-li isn't really a street fighter, though. Though the series is called street fighter, she's just an interpol officer who uses a type of Tai Chi variation (there many). Anyway, she is after Bison for revenge.That, however, stops after SF2, when Bison is finally killed by Akuma for good (thus, Rose died too).
As for Bison, his true intent lies on getting ultimate power, so he can do as he wishes. That's why he's after Ryu; and his fighting style is just defined as Psycho Power.
