Not sure what you mean by making things different, but one event that could be fun is a "hand-to-hand only" tournament, where no supers or combos or special attacks are allowed, just hand-to-hand combat.
In other words, the first use of a Hadoken, Hurricane Kick or other similar move is a disqualification. That might be a bit hard to prove, since as far as I know, each fight lacks a referee. But it's something I thought might be interesting to try, since so many battles are won solely by supers.
