Hollis is correct. Blocking is set to it's highest priority, and can get no quicker/better.
In order to successfully block super moves...
You need to interpret when your opponent is about to throw a super..and block in advance.
Yup thats right...joo gotta become a mind reader from halfway around the world!

It's pretty easy though..just keep an eye on your opponents energy level.
When they begin to get close to a level up..you can expect them to throw a super move.

What the real problem is...is that people are to busy trying to hammer the projectile moves and beating on their opponents ghost...instead of trying to play a defensive game.

If you actualy pay attention to whats going on during the match (instead of being concerned about a win/loss)...you'll find that 90% of all players are extreamly predicable.
Once you realize the common tactics and timing used by the other players...you'll learn when to advance, when to retreat, when to attack, and how soon you'll need to block...and you'll become alot more successfull at the game.

Advice...
Dont rely on the super jump to evade your opponents hyper move...practice plain old blocking.
i/e: at the exact same instance you see your opponents power up image begin to slide into view, press and hold block...take the chipping damage and the energy that comes with your opponents super, so you yourself can power up quicker and fire more supers of your own.
Remember, pressing and holding 1 button to block, takes less time, effort, risk, and damage then pressing 2 buttons to super jump...just to get slammed full force with a hyper anyways.
