I'm amazed that people are missing the fundamental rule of fighting games: block. Block in the air, block on the ground, block while ducking, you need to get the hang of when you need to block.

Generally good times to block are...

Standing (not moving for whatever the reason)
Jumping (hold back during the jump)
Immediately after you use a super (enemy may counter)
If opponent is being cheap and keeping you in a corner while using only one attack (grr... evil cheap players...)
