In high-level play, instant kills are almost impossible to land. You need to activate the Instant Kill mode, and then you need a clean chance to land it. While in Instant Kill mode, your meter empties, and then your life goes down some. If you fail to land it, you do not have a meter and can't do Faultless Defense, Roman Cancels, or supers for the entire rest of that match. It is an incredible risk to do an Instant Kill.

Gameplay-wise, Guilty Gear games win out over SFA3 easily. You just haven't learned the nuances of the system, and how to link together bizarre stuff to create nice combos. In addition, you probably don't know the exact rushdown strategies that each character calls for, which is another gameplay aspect.
