Sometimes you can't just press the button combination to get a helper. what I do is(when I'm picking blanka):

move to the character I want
press MP, and LK to choose my character
then hold down MP and LK till i get the character I want.

I would also do as CW suggested. There's about a 40-60% chance you'll get who you chose if your not hosting.
